I still remember the time my coworker juiced some beets for me because she was on a New Year’s cleanse and offered me a glass right before a company-wide meeting. I said sure, and that was when I learned that raw beets and I do not agree.
Which is such a shame because beets are great. These beets were definitely so because they were grown at a friend’s organic farm under the most beet-ific conditions possible (see what I did there?). These days I chop them up into matchsticks and sauté them into a Sri Lankan style curry. But not before I give them a bit of a glow up session in my studio.
